Variety is the Key to Vegetarian Sources of Protein


You may be asking yourself; “What are the vegetarian sources of protein”? There are certainly more than people think. As a matter of fact a lot of people think that the only real source of protein is from meat. This is far from the truth.

Vegetarian sources of protein include beans, whole grains, nuts and seeds, dairy products (such as yogurt, cheese, and milk), vegetables, fruits, eggs, and those famous “veggie burgers”.

Complete proteins are made up of 22 aminio acids. Meat, chicken, eggs, fish, and most dairy products include all 22. Plant based foods do not have complete proteins.

However, since all vegetarian sources of protein do not have the required 22 aminio acids, Mother Nature has the answer. Your body, the amazing machine that it is, pools all of the aminio acids that you take in during the day. It then combines them to make complete proteins!

As long as a vegetarian is eating a variety of the sources of protein listed above, it is highly unlikely that he or she will not get the required amount of protein.

So the answer is: vegetarian sources of protein are everywhere! Just make sure that you get the variety. After all, variety is the spice of life!

Oven Roasted Potatoes


This is one of my favorites. There is nothing quite like fresh potatoes. You may use white or red potatoes in this. I prefer the red. This will yield 6 servings.

Oven Roasted Potatoes Ingredients:

6 large red or white potatoes

1/3 cup vegetable oil (or olive oil if you prefer)

1 t black pepper

1 T chopped fresh parsley

1 T chopped fresh basil

Preheat the oven to 375 degrees. Place the potatoes in a shallow roasting pan or oven proof serving dish. Combine all ingredients and pour over potatoes. Mix well to coat. Bake for 1 hour or until fork tender.  Turn occasionally to prevent sticking.

And there you go. A mouth watering side dish or main course!

Detoxification


Quite often detoxification and cleansing is seen as a fringe benefit of being on a vegetarian diet. Harmful toxins building up in the colon and arteries is something that most people do not like to think about. Often this buildup of of harmful toxins is a by-product of a carnivorous diet. Our digestive systems and our elimination processes are slowed down and interrupted by a diet that is high in fat and processed foods.

Benefits of a Vegetarian DietWhen this happens harmful bacteria and toxins accumulate . This can cause you to feel sluggish. It can also contribute to other disorders such as irritable bowel syndrome, or colitis. A vegetarian diet will put more fiber in our systems reversing these problems.

When you take the fat and processed foods out of your diet, your body can do more good things for you instead of trying to digest that garbage. You will be amazed at your new found clarity. Your blood, organs, and mind will be much clearer. At that point you will realize the bad side effects that the fat and processed foods had on your system.

Cancer and cardiovascular diseases are at an all time high. That is why toxicity is of a much greater concern. Many new and stronger chemicals are everywhere. Air and water pollution is worse than it has ever been. We abuse our bodies daily by ingesting chemicals, drugs, sugar, refined foods, stimulants, and sedatives.

Some other by-products of toxicity are arthritis, allergies, obesity, skin problems, headaches, fatigue, pains, coughs, gastrointestinal problems, and weak immune systems.  Starting a vegetarian diet plan will reverse these effects and eventually your body will cleanse itself.

Vegetarian Recipe: Grain and Cheese “Burger”


Here is a nice recipe for the grill. A burger without the burger! Try it.


Vegetable Recipe: Burger      

Grain & Cheese Burger

 

      Yield: 4 Servings

 

  1 1/2 c  mushrooms,chopped

    1/2 c  green onions,chopped

      1 T  margarine

    1/2 c  rolled oats,regular

    1/2 c  brown rice,cooked

    2/3 c  shredded cheese,mozzarella

      1    or cheddar

      3 T  walnuts,chopped

      3 T  cottage (or ricotta cheese)

      2 lg eggs

      2 T  parsley,chopped

      1    salt,pepper

      1    buns,mayo, tomato, lettuce

 

In a 10 to 12 inch nonstick frying pan over medium heat, cook mushrooms and green onions in margarine until vegetables are limp, about 6 minutes. Add oats and stir for 2 minutes. Remove from heat,let cool slightly, then stir in cooked rice, cheese, walnuts, cottage cheese, eggs, and parsley. Add salt and pepper to taste. On an oiled 12X15 inch baking sheet shape into 4 patties, each 1/2 inch thick. Grill 3 inches from heat, turning once, 6 to 7 minutes total. Serve on bread with mayo, onion rings, and lettuce.

If you have spent your whole life eating animal products you are probably wondering  “why become a vegetarian now”? After all, you have really enjoyed steaks, hamburgers and poultry. It’s the way it is supposed to be. Right?

Become a VegetarianThere could be many reasons to become a vegetarian. First, take a look at yourself. Are you at the weight that you should be? Do you feel good most of the time and have plenty of energy? Or do you feel tired and lifeless?

How is your health in general? Blood pressure, cholesterol, and other indicators all in range? If they are not, take a look at what you are putting in your body everyday! Your health is definitely a great reason to become a vegetarian.

After eating, your body should feel energized and ready to go. Not tired and make you want to take a nap! Your body will tell you if you gave it the correct food.

The human body is a machine. It needs the correct fuel and maintenance to be run at peak efficiency. If you put watery gas in your car and never tuned it up, how would it run?

You do not have to make up your mind to become a vegetarian today. Just try it for a week or a month. And if you are starting to become a vegetarian or just trying to become a vegetarian, you can “ease” into it. Increase your vegetable intake and decrease your meat intake.   Make meat the side dish and vegetables the main course.

You may find that you can become a vegetarian gradually, without sacrifice. Even a slow change will make a big difference in your overall well being. Try it today. Become a vegetarian!

What You Eat Can Make or Break You


Have you ever heard the expression, “You are what you eat”. Have you ever wondered exactly what it means? Have you thought about it when you are making your food selections?

Vegetarian Vegetables To some extent that saying is true. Your blood plasma which is usually clear, is cloudy with the fat and cholesterol absorbed from eating just one fast food hamburger!

So if that is true, then the opposite must also be true. We become what we don’t eat! So if we eat vegetables instead of meats, we become less fat. We are less prone to many types of cancers. Our cholesterol will improve. When we are leaner and less fat, other health concern levels fall into the correct ranges. Blood pressure is reduced. You will need less medications to correct your health issues. So you will be saving money!

If you have family histories of health problems, it is even more important that you do something. Eating less meat and moving towards a vegetarian diet has been statistically proven to reduce cases of diseases.  Vegetarians live longer and live healthier lives than their meat loving counterparts.

So which way should you go? Well, do you want to be healthier and lean, or fat and sickly? Do you want to risk leaving this earth and your family sooner? Or would you rather look better, feel better and live longer? Enjoy your life! It’s never too late to get started. What are you waiting for!

Welcome and a Portobello Mushroom Recipe

Portobello MushroomsAnd now on with the recipe. I love Portobello’s on the grill. I usually stuff them with spinach, onions, and garlic. But this winter, to save me from standing out in the cold, we decided to try and come up with an inside recipe. Here it is:

Ingredients:

2 T garlic flavored olive oil (or you could just put fresh garlic in)

4 T olive oil

1 small onion (cut into chunks)

2 large portobello mushroom caps (sliced)

freshly grated cheese ( Parmesan or Asiago or both!)

Directions:

Warm the garlic flavored oil and half of the olive oil in a pan over medium heat. Put the onions and mushrooms in and stir them into the oil. Reduce heat to low. Cook until the onions are dark around the edges the mushrooms are soft.  Do not let them dry up. You may have to add more oil.  Put it in a serving dish and drizzle the remaining olive oil on top.  Season to taste with salt and pepper. Then sprinkle with the cheese that you chose. Enjoy!
